Cooking Squash

I am busy using up some of 2011's produce that we have kept in the cellar. Squash is a favorite of ours and we love it whipped with marshmallows toasted on top! This was our last squash for the year. Good thing spring is around the corner! Excited for the 2012 gardening season and harvest! We planned our garden last Thursday! With the warm weather we have been having...who knows...we might be planting early!

Do you keep squash over the winter? How do you like to fix it?

I don't know if you've ever tried this Carla, but I always cut my whole squash in half, take the seeds out, and put both halves face down on a greased cookie sheet - then bake it for about 1.25 hours at 350 degrees. Both ways work, of course. (I use this method when I want to freeze it too, putting it in bags after scooping it out). And there's not much better than squash with lots of REAL butter and S&P. :-)

  2. I've never cooked a squash. (Other than zucchini)I don't mind eating it if someone else cooks it but I'm too lazy to cook it myself.) Kudos to you that you've trained your kids to like squash.
