 This is my first year making Dilly Beans. Yummy! I used a recipe I found in Country Living Magazine, but I did not add dill seeds, cayenne pepper or mustard seeds. We tried our Dilly Beans for lunch Tuesday and everyone loves them. Here is my easy recipe for Dilly Beans.

Refrigerator Dilly Beans
Makes 2 pint size canning jars

1 bunch of fresh dill
2 garlic cloves ~ or bit more if you like garlic like I do
1 pound of beans, ends trimmed
1 1/3 cups cider vinegar
1 1/3 cups water
2 tablespoons kosher salt
1 tablespoon sugar

Divide fresh dill, garlic and beans in jars, packing the beans in lengthwise.
In a small sauce pan, combine vinegar, water, salt and sugar and bring to a boil. Stirring until the salt and sugar dissolve.

Pour boiling liquid over the green beans and seal. Cool on a wire rack and refrigerate.
Wait 2 days or more before serving.

  3. I have never had beans like this! I don't care for anything with dill (I know I am weird!), I may have to try this without the dill!

  4. I've wanted to try something like this -- just need to get garlic and dill. :-) I have lots of beans. I've seen other recipes but I like the smaller version of the recipe - so I don't have to get so many ingredients.
