Sweet Potato, Feta and Kale Muffins ~ Joy List Monday


Sweet Potato, Feta, Kale Muffins

2 whole sweet potatoes peeled and cubed
1 Tbsp. olive oil
2 whole eggs
1/3 cup melted butter
1/2 cup milk or substitute almond or soy
1 1/2 cups all - purpose flour
2 Tbsp. brown sugar
2 tsp. baking powder
1/8 tsp. fine sea salt
1/8 tsp. black pepper
1 1/2 cup of fresh chopped kale
3/4 cup crumbled feta cheese

Lightly coat sweet potatoes with olive oil and bake in 400 ° oven for 20 minutes or until tender.

Let potatoes cool completely before handling again (roughly 20 minutes)

Coat muffin tin with olive oil or cooking spray

In a large bowl, mix eggs, butter and milk.
Add flour, brow sugar, baking powder, salt and pepper until dry ingredients are moistened.
Stir in potatoes, kale and cheese.
Divide batter into muffin cups, about 3/4 full.

Bake muffins in 400° oven for 18 to 22 minutes.

Our family fell in love with the sweet taste to this packed with goodness muffin.

♥ snail mail .... received a fun card, letter and recipe in the mail from my cousin ... always fun to receive mail

♥ British literature ... excited how my boys are excited to read Beowulf

♥ soaking in the last of summer flowers, beautiful, bright zinnias

  2. Oh Carla, those healthy muffins sounds so good. I have some kale in my garden... What would be the size of the sweet potatoes you used. They are some huge ones at our Co-op. It would be nice knowing the measurement as per cups.
    I hope that you can figure give me the length and circumferance of the sweet potatoes you used.

  3. Yum! Yes, I am enjoying the zinnias too. I had not realized how late in the season they bloom. Even after the crepe myrtle.

  9. These muffins look filling enough to be a meal. They look Yummy, Carla. Isn't snail mail the best? I'm so happy to know someone who still loves to receive notes and cards in the mail. Apples and apple desserts always remind me of Fall.
