January Rewind & Episodes 4 - 5

January Rewind

I am going to share a few highlights from January and Episodes 4 - 5 from our 52ish weeks.

Birthday Pie

My husband celebrated a birthday in January. I made him a pecan pie, without using corn syrup.  This recipe is a little more time consuming than using corn syrup, but it is so good. The secret ingredient is bourbon.

January has been brisk, but we have been brave and got out and about a few times for walks along the river.

I have been receiving cribbage lessons from my husband. So far I have not won a game. Hmmm.. should I start to wonder about my instructor?

Ha!

Texas Grapefruit in season at the market. I like to sprinkle powder sugar on my grapefruit.

Episode # 4 of 52ish weeks

We hiked along the Red Cedar river. It was snowing lightly during our hike.

As we walked all of a sudden this mouse came out from under a tree, he came right up to us. We had Ernie with us too, so I was in shock how this fella actually posed for a photo. Our dog Ernie was in shock as well, he did not even bark.

What are you people doing out in this weather?

Episode #5

We had different plans for our day datn' but the weather did not want to cooperate.

Plan B it was with movie night.

My husband makes the best popcorn.

  1. That mouse pic!! So good and odd that he came up to you like. His expression does seem to say, "What are you doing out here?" Popcorn and Bourbon pecan pie- two of my very favorites!! I've never used bourbon in pecan pie that I've made but I've had it in pecan pie before and I really liked it. Have a great Monday!

  2. Ohhhhh the little mouse that met you on the trail. He was probably hoping you had a little snack for him. Bourbon in pecan pie seems like that would be a good combo. Happy Belated birthday to Jeremy. Enjoy this coming week and Happy Valentine's Day. Hugs. Kris

  6. eeeeek, a mouse! You know, I have a dreadful fear of them, Carla. Was wondering what you did when he was right in front of you? And surprising that he stood still for you to get a pic. Your hike is beautiful, and how neat that it was lightly snowing as you were walking along. And your pecan pie! It looks so Yummy. I just bought one myself, but homemade is so much better. Keep warm, Carla, and have a pleasant February week. : )

Oh what a cute little mouse. Did he ask for alms?
We are hoping to get out for a hike tomorrow afternoon-- first one in a couple of weeks-- too much snow for SoCal and Arizona people.

  12. I love a game of cribbage. Belated birthday wishes to your Hubby. I'd have opted for a movie night too rather than being out in the cold.

  16. I smiled and said “awwww” when I saw your kissing photo 🥰
I have never played cribbage, but good for you in learning how, Carla. How fun to go to your favorite cheese store on your previous date. . I’ve never had cheese curds, but I know I’d love them.
Pecan pie is my favorite! I’ll bet your hubby had a great birthday!

  19. What a sweet couple and making the best of bad weather to still have a date night. That popcorn looks amazing and so does that pie. I have to say that little mouse is so cute. We saw one on the boardwalk and were shocked to see one up there too.
