Cream of Potato Soup

Cream of Potato Soup

Today, I am sharing my husbands Potato Soup recipe. It is a family favorite.



CREAM OF POTATO SOUP

5 Cups Chicken Broth
1½ Cups Whole Milk
½ Cup + 2 Tablespoon Butter
⅔ Cup Onion (diced)
¾ Cup Flour
1½ Teaspoon Salt
1 Teaspoon Pepper
1½ - 2 Pounds Potatoes

Cube potatoes to ½” size. Boil until tender.
Drain potatoes.
Melt butter in large sauce pan.
Whisk in onions, flour, salt and pepper. Stirring until mixture bubbles.
On medium high heat, whisk in milk and then chicken broth. Cook until mixture thickens but do not boil.
Add drained potatoes, stir, then cover and simmer for 15-20 minutes. Stir occasionally.

Note: If using a concentrated chicken broth mixture or powder use the water from the potatoes to make your broth.

  1. Yum! I definitely don't have a go to Cato soup recipe, I think I may just have found one! I usually talk mine with green onions that's about it, I love the rich and creamy taste, perfect for winter comfort food!!!!

  6. I made two soups over the snowy weekend and one was a creamy potato. I love any kind of bread or crackers with my soup. I'd load up the potato soup with some cheese & green onions. Yum!

  7. Your potato soup sounds very good. I usually cook chowders like clam chowders, seafood chowders and corn chowders. I usually put a bit of bacon in it too. So yummy.

  9. I don't think I have had potato soup since I moved out on my own! So, just a few years ago, lol! My mom served it without the extra's, so I am loving your add-in ideas. I'll take Bacon, cheese and onions, please! And a nice roll on the side :)

  10. It is freezing here today, cold and gloomy and very grey, so this would be absolutely the perfect dinner. Maybe I should make some as well. Meanwhile, I have a crafternoon and a new kind of cookies to sustain me :-)

  11. Oh yummy! Potato soup is a favorite here, and we often add chicken, ham or bacon, depending on what is available in the refrigerator, lol! Your pictures are wonderful, showing all the steps involved! Enjoy the deliciousness :)

  12. Loaded? Yes, Please! Thanks so much for posting this recipe. I've been craving potato soup. My grandmother used to make it for me when I was sick, and since I'm coming off of a nasty cold from last week, this sounds divine! I'm pinning it to my What To Have for Dinner board!
