Sweet Potato, Feta, Kale Muffins
2 whole sweet potatoes peeled and cubed
1 Tbsp. olive oil
2 whole eggs
1/3 cup melted butter
1/2 cup milk or substitute almond or soy
1 1/2 cups all - purpose flour
2 Tbsp. brown sugar
2 tsp. baking powder
1/8 tsp. fine sea salt
1/8 tsp. black pepper
1 1/2 cup of fresh chopped kale
3/4 cup crumbled feta cheese
Lightly coat sweet potatoes with olive oil and bake in 400 ° oven for 20 minutes or until tender.
Let potatoes cool completely before handling again (roughly 20 minutes)
Coat muffin tin with olive oil or cooking spray
In a large bowl, mix eggs, butter and milk.
Add flour, brow sugar, baking powder, salt and pepper until dry ingredients are moistened.
Stir in potatoes, kale and cheese.
Divide batter into muffin cups, about 3/4 full.
Bake muffins in 400° oven for 18 to 22 minutes.

ReplyDeleteOh Carla, those healthy muffins sounds so good. I have some kale in my garden... What would be the size of the sweet potatoes you used. They are some huge ones at our Co-op. It would be nice knowing the measurement as per cups.

Yum! Yes, I am enjoying the zinnias too. I had not realized how late in the season they bloom. Even after the crepe myrtle.

These muffins look filling enough to be a meal. They look Yummy, Carla. Isn't snail mail the best? I'm so happy to know someone who still loves to receive notes and cards in the mail. Apples and apple desserts always remind me of Fall.
