Taco Soup

2 pounds ground beef
1 medium onion
1 can crushed tomatoes
1 can tomato sauce
1 cup water
1 can whole kernel corn - drained
1 can of pinto beans, rinsed and drained
1 envelope taco seasoning mix
In a Dutch oven or soup kettle, brown beef and onion; drain.
Add tomatoes, tomato sauce, water, corn, beans and taco seasoning. Bring to a boil.
Reduce heat and simmer for 5 minutes.
Toppings
Cheese
Avocodo
Tomato
Sour Cream
Corn Chips
We love Taco Soup. It is a belly warming soup, perfect to get the chill out.
I love to top mine with lots of extra cheese.

ReplyDeleteTaco Soup is one of my most favorite winter meals. It's easy to prepare, the leftovers are delicious and it tastes good with whatever you decide to put with it...cornbread, Frito chips, tortilla chips, cheese! It's all good! Love and hugs to you!!

ReplyDeleteThis is such a good soup. We've made this for years and really enjoy it. It's so nice because it is very quick to make at the last minute, but if you prefer you can add the browned beef to a slow cooker with all the other ingredients and just let it cook that way. I've done that many times. I make a homemade taco seasoning mix and just use a couple tablespoons of that ... works great!
