Strawberry Waffle Cone Ice Cream

 

We enjoyed a Father's Day outing at my sister and brother in law's home. My sister's husband cooked up some delicious smoked ribs. We enjoyed cheesy potatoes, salads and I was asked to bring dessert.

My husband and I recently enjoyed Cedar Crest ~ Blueberry Waffle Cone Ice Cream.

I thought I would try to make Strawberry Waffle Cone Ice Cream.

I used the following recipe to make my Strawberry Ice Cream.

Strawberry Ice Cream

2 ½ cups sugar

1 cup of whole milk

4 egg yolks

2 cups of pureed strawberries

1 cup of  ½ & ½

1 cup of heavy cream

1 teaspoon of vanilla extract

In a medium sauce pan, whisk together sugar, milk and egg yolks.  Place pan over medium high heat and whisk until mixture reaches a simmer. Lower heat to medium and whisk mixture for 5 minutes or until it begins to thicken. Strain into a large bowl, then whisk in strawberries, ½&½, heavy cream and vanilla. Cover with plastic wrap and refrigerate until chilled. About 2 hours ( I let mine sit overnight). 

Pour mixture into ice cream maker; process according to manufacturer instructions.

After the ice cream making process, I folded in the chunks of waffle cone.


YUM!

 I am happy to report my Strawberry Waffle Cone Ice Cream was a big hit!

Hot Fudge Golden Grahmas Parfait

 Hot Fudge Golden Grahams Parfait
This is a fun sundae. We hosted a dinner party a few weeks ago and I wanted to try a new dessert. I found this fun recipe and it did not disappoint.

What you need:
1 cup sugar
3 tablespoons honey
3/4 teaspoon salt
1/4 teaspoon baking soda
2 1/2 cups Golden Grahams cereal
1/2 cup toasted sliced almonds

Line a baking sheet with parchment paper; lightly grease.
Bring sugar, honey, and 3 tablespoons water to a boil in a medium saucepan over medium heat. Cook without stirring, until mixture is a deep-amber color, 6 to 7 minutes; remove from heat.
Immediately stir in salt and baking soda, then quickly stir in cereal and almonds.

Spread mixture on prepared baking sheet. Let cool until hardened, 40 to 45 minutes.
 Break into clusters.

Scoop up your ice cream, add your honey comb and swirl on your hot fudge!

Coffee Ice Cream

Coffee Ice Cream
3/4 cup sugar
3 large egg yolks
2 teaspoons all purpose flour
1/4 teaspoon salt
1 cup milk
3/4 cup whole coffee beans
1 1/2 cups heavy cream
1/2 teaspoon vanilla extract
 
In a medium mixing bowl, beat the sugar into the egg yolks, until they are thickened and pale yellow. Beat in the four and salt. Set aside:
 
Combine the milk and coffee beans in a heavy medium sauce pan. Bring to a boil over medium heat. Lower the heat, cover and keep warm for 20 minutes.
 
Remove the coffee beans with a skimmer or slotted spoon. Slowly beat the warm milk into the eggs and sugar. Pour the entire mixture back into the pan and place over low heat. Stir constantly with a whisk or wooden spoon until custard thickens slightly. Be careful not to let the mixture boil or the eggs will scramble. Remove from the heat and pour the hot coffee custard through a strainer into a large, clean bowl. Allow the custard to cool slightly, then stir in cream and vanilla. Cover and refrigerate until cold or overnight.
 
Continue to make your custard in your ice cream machine.
 
 
Slowly cooking the coffee beans, to make the flavoring.
Finished product! Yummy!

Basil Ice Cream


Basil Ice Cream
recipe from Susan Branch

Ice Cream:
3 c. heavy cream
1 c. milk
1/3 c. sugar
1 c. packed basil leaves
6 egg yolks, room temp.
1 lemon, juice and zest

Put cream, milk and 1/2 cup basil in a large sauce pan. Bring to boil, cover and let stand for 1 hour. Add the sugar, stir to dissolve. Return liquid to boil. Whisking constantly, add hot liquid in thin intermittent stream to egg yolks until yolks are hot, return all to pan. Beat over low heat until thickened (4 to 5 minuets). Chill over night. 

Put mixture in blender with remaining basil, zest and juice, blend until smooth. Spin in ice cream machine, then put into container and freeze at least 4 hours.

To Serve
My first time serving this delicious basil ice cream I served it with tomatoes as suggested from Susan. I liked it with tomato. My husband did not, but he likes the ice cream.
My boys did not care for the ice cream at all.

July is National Ice Cream Month

In 1984, President Ronald Reagan designated July as National Ice Cream Month and the third Sunday of the month as National Ice Cream Day, which this year will be celebrated on July 20.

He recognized ice cream as a fun and nutritious food that is enjoyed by a full 90 percent of the nation's population. In the proclamation, President Reagan called for all people of the U.S. to observe these events with "appropriate ceremonies and activities."

People in this country do eat a lot of ice cream ~ the U.S.  ice cream industry generated total revenues of $10 billion in 2010, with take-home ice cream sales representing the largest section of the market, generating revenues of $6.8 billion or nearly 68 percent of the market's overall value.

About 9 percent of all the milk produced by U.S. dairy farmers is used to produce ice cream.

Raspberry Cheesecake Ice Cream and The Winner of Our Giveaway

 Raspberry Cheesecake Ice Cream
3 ounces cream cheese, softened to room temperature
1 cup of sugar
1 1/2 cups pureed, strained raspberries
1 cup of whipping cream
1 cup of whole milk

In a large bowl, whisk cream cheese until smooth; add sugar and continue whisking until combined. Whisk in raspberries, followed by cream and milk, until fully incorporated.

Pour mixture into ice cream maker

I just received breaking news from my cousin Kris. Guess what? July 8th we celebrate the first ice cream sundae served in 1881 in Two Rivers, Wisconsin!

Ice Cream and more

Hi Friends, we had a busy week working on projects. We accomplished several projects. YAY! That always makes you feel good. I will share our projects in future posts.
Ding, Ding, Dong, Dong, Ding, Ding...
We could hear this fun music while working. What on earth is going on? Well, to our surprise an ICE CREAM truck, in little ol' Cameron, Wisconsin! They boys loved the idea. And yes, we had to have an ice cream break. 


Having fun...in the summer sun.
One of our projects was to put up our snap pool. It takes a few days to warm up, but we had two brave boys. They just could not wait to jump in!

This ice cream was so fun to make, and it tasted amazing! It also made our house smell like Starbucks. I made Coffee Ice Cream for our Easter dessert. It was a hit!

Peanut Butter Butter Cup?

Not sure how to go about naming my new ice cream. I made Peanut Butter Peanut Butter Cup ice cream on Friday for my sisters birthday. It is wonderful! Peanut Butter ice cream batter with chunks of Peanut Butter Cups swirled around. Yum. I am glad I left her the batch. I love making ice cream, but I have to give it away or have a party to go to with it or my waist line will be in big trouble! :-)

New Hobby...Future Business???

Ice Cream

 My new hobby, making ice cream.
I have wanted an ice creamer maker for a long time. I saved up and got one this late summer. I have had a great time making ice cream. I have made Peanut Butter for Jeremy. Peach, which is pictured above and we served it at my Grandmas Birthday party. This weekend I made Butter Pecan. I love it! They boys think I should open my own ice cream shop.
Mmmmm...I am thinking about it. :-)
